Sonar detects fish, because they have a different density than the water around them. Anywhere that is fish "body" will read differently than water, so you can tell the relative size and shape, and if the fish is not completely overlap, you will get an idea of numbers. But that's about all that sonar can do. Imagine trying to identify a fish from the shadows on a white wall – it's about what sonar "sees". Plus you have the problem of "seeing" the shape from above, or at best a downward angle – not from the side that can give you more of a hint as to the form. And abundance, even of a fish, will vary depending on how long it eaten, or how much air in the air bladder (a function of the depth where the fish are swimming).
